Caramelized Onions in Raspberry Vinegar

The Raspberry Vinegar caramelized onions, with their sweet and sour notes, look great with mature and fresh cheeses, excellent for a reinforced aperitif.

        Prep and cook time: 1 hour & 10 minutes
        Level: Easy
        Yield: Serves 4


    •    salt
    •    butter
    •    50g sugar
    •    700g red onions
    •    150g raspberry vinegar

Method: Slice sliced onions. Let them marinate for 1 hour, in a bowl, well mixed with the raspberry vinegar. Drain and transfer them to a pan with the sugar, a pinch of salt and a knob of butter. Brasatele for 4 - 5 minutes on high heat, turn off and let cool. Serve with parmesan flakes and a fresh primosale-type cheese.
