Soba Salad with tuna

Crisp, fresh vegetables, and heart-healthy tuna makes this dish a nutrient bomb. Soba noodles themselves are a good source of protein and fiber, not to mention being gluten-free. When you add in the antioxidant rich veggies and omega 3s from the tuna, you’re bound to feel great and focused all the workday long. 

Something spicy, healthy, delicious and screams of summer!

Ingredients:

For the dressing:
1 tsp Shiro miso
1 tbsp cocoamino
1 tsp sesame oil
1/2 inch ginger grated (Microplane)
Some dried chillies

Method:
Mix it well together. Toss the noodles in the dressing.
Garnish it with sesame seed and coriander.

To replace the tune, use fried tempeh or fried chickpea flour strips.
